Speckled Oreo Crunch Cookies
INGREDIENTS:
1 cup unsalted butter, softened
3/4 cup maple sugar or light brown sugar
1/4 cup granulated sugar
1 (3.7-ounce) package instant organic vanilla pudding mix
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all purpose flour
1 cup whole wheat pastry flour
1 teaspoon baking soda
3/4 teaspoon salt
2 cups chopped Oreos (we used 365 brand all-natural version)
1 (5-ounce) bag Little Secrets Peanut Butter Chocolate Pieces
Flaky Sea Salt
INSTRUCTIONS:
Preheat oven to 350º F. Line a baking sheet with parchment paper.
In the bowl of a stand mixer, cream the butter and sugars together until creamy. Add in the pudding mix, eggs, and vanilla. Add the flours, baking soda, and salt, and mix until just combined. Stir in the Oreos and peanut butter chocolate pieces.
Roll cookie dough into tablespoon-sized balls, and place onto baking sheet. Bake for 10-13 minutes, or until slightly golden around the edges and set. Remove from oven and sprinkle with flaky sea salt. Cool on baking sheet five minutes, then transfer to a cooling rack and cool completely.
