Savory Butternut Waffles with Egg and Hot Honey

Ingredients:

Waffles:

1 ¼ cups all-purpose flour

1 cup whole wheat pastry flour

1 tablespoon baking powder

¾ teaspoon sea salt

1 teaspoon ground cinnamon

3 large eggs

1/2 cup buttermilk

1/4 cup melted coconut oil

3 ½ tablespoons unsalted butter, melted

½ cup butternut squash purée

3 tablespoons maple syrup

3-4 dashes hot sauce (to taste)

1 tablespoon vanilla

 

Hot Honey: 

1/4 cup honey

1 1/2 teaspoons hot sauce

Toppings (optional): caramelized onions, avocado, fried egg, chili peppers

Instructions:

  1. Preheat a waffle iron.

  2. To make the waffles, whisk together the flours, baking powder, salt, and cinnamon in a large mixing bowl.

  3. In a medium mixing bowl, whisk the eggs. Add the buttermilk, coconut oil, butter, butternut squash purée, maple syrup, hot sauce and vanilla extract. Whisk until well combined.

  4. Pour the liquid mixture into the flour mixture, and stir until just combined. Let the batter rest 10 minutes.

  5. Meanwhile, make the hot honey by combining the honey and hot sauce in a small bowl, and whisking until well combined.

  6. Pour batter onto the heated waffle iron and close the lid. Cook 4-5 minutes, or until crispy and golden brown.

  7. Serve warm topped with caramelized onions, avocado, fried egg, chili peppers, and hot honey, as desired.
