ALL YOU CAN EAT.
Oh hi. Remember me? My name is Julianna, and I am that terribly inconsistent blogger. I also feel like the word “blogger” now has a negative connotation, but I will save that rant for another time. Anyway, I’m back, and my unofficial “I don’t make resolutions” resolution is to write more. I’m the biggest pusher of journaling, yet I hardly put pen to paper anymore. Digital journaling (ie this blog post) counts, right?
Before the holidays, cramming for finals (everyone passed!), family in town, and all the festivities, here’s what you missed from class:
Two weeks of class were dedicated to learning buffet service, restaurant service, and how to teach a cooking class. Starting with buffet service, we worked as a team to divide and conquer a myriad of dishes over the course of two days.
The menu included everything from bread, soup, salads, pate, a variety of entrees, and dessert.
Incidentally, I was in charge of the tacos, which seemed appropriate. We served fried cauliflower tacos with red cabbage slaw, pickled radishes, pico, and avocado crema.
When all the dishes were finished (the time crunch was real), we rearranged our classroom to serve all of the staff at the school.
After buffet service, we went into restaurant service, meaning we learned how to mis en place every dish on the menu to get it to the stage that, when someone ordered a certain dish, we cook cook, assemble, and plate it in record time.
I can never eat at a restaurant the same. All I think about it what’s happening in the kitchen before my dish arrives.
For restaurant service, we prepared Ginger Marinated Salmon with Grilled Zucchini, Pan Fried Curry Tempeh with Pineapple Salsa, and Warm Apple Phyllo Tarts for dessert.
Midterms and a series of classroom incidents nearly broke us all, so a week and a half off for the holidays was very much needed. And now that we’re back and feeling refreshed, we’re officially bakers! Stay tuned for alllll of the cookies and cakes.
